Day Schedule
As a guide courses start at 8:45 and finish at 4:30 and include lunch. The Game courses will be taught by Mike personally in which you will prepare three recipes, to include pheasant, rabbit and wild venison. You can then go home and recreate the dishes perfectly. The Full Venison course includes a visit to a local deer park to see how deer are humanely culled and field dressed. Then learn the principles of brining prior to smoking the meat and marinading.
